Fresh Milled Flour Dinner Rolls

These fresh milled flour dinner rolls are not only easy and quick to prepare, but they also offer a delightful flavor that is both sweet and slightly nutty. Making them a great alternative to those store-bought dinner rolls.

Equipment

  • 1 Stand Mixer
  • 1 9x13 Baking Dish

Ingredients
  

  • 2 cups hard white wheat berries
  • 1 cup spelt wheat berries
  • cups warm water
  • 2 tsp salt
  • 2 Tbsp instant yeast
  • Tbsp Olive oil
  • ¼ cup honey
  • 2 eggs

Instructions
 

  • First, mill the flour
  • Then, warm your water to 90 degrees
  • Add warm water, salt, olive oil, honey, and eggs to your mixer and combine
  • Next, add the flour & mix until incorporated
  • Now, cover and let rest for 15-20 minutes to allow the fresh milled flour to start absorbing the liquids
  • After the rest, add in the instant yeast & mix in
  • Then, begin the kneading process. If more flour is need begin adding SLOWLY just until dough is pulling away from sides of the bowl.
  • Knead until you reach windowpane. This takes about 10 minutes in my Bosch mixer. To check for windowpane, pinch dough between your fingers and stretch it. If you are able to stretch it enough to see light through it, you have reached windowpane. The dough will be sticky at this point. That's normal!
  • After you have reached windowpane, oil your hands and working surface, this will make working with the dough easier.
  • Remove dough from mixer and divide into 12 parts
  • Roll & shape each part into a ball, making sure to create tension to get a better rise
  • Place rolls in a greased 9x13 baking dish
  • Cover & let rise for 45 minutes to an hour
  • Pre-heat over to 375 degrees
  • Bake at 375 degrees for15-20 minutes. Internal temperature should be 185-190F when done.
  • Butter tops of rolls & enjoy!
