If you want a quick and simple dinner roll recipe, you’ve come to the right place! These fresh milled flour dinner rolls are not only easy and quick to prepare, but they also offer a delightful flavor that is both sweet and slightly nutty. Making them a great alternative to store-bought dinner rolls.

Choosing grains for fresh milled flour dinner rolls

You can absolutely pick any grains you like for your dinner rolls. Just keep in mind that you’ll need to play around with how much liquid and flour you use since this varies based on the type of grain used. For example, the harder grains such as hard white or hard red, you will want more liquid. But when using grains such as spelt for yeast breads, you will need a little less liquid. This is the part where you have to play around with amounts and see what works best for you. For these dinner rolls, I decided to use 2 cups of hard white wheat berries and 1 cup of spelt berries to give them a sweet but somewhat nutty flavor.

What is Spelt?

Spelt is an ancient grain that has been around for thousands of years. Mainly used in the Middle East and Europe, but its popularity is on the rise in the United States. Spelt is a member of the wheat family that provides a higher amount of protein and fiber while having a lower glycemic index. Due to the significant amounts of protein and fiber and lower gluten content, this is a great option for people with type 1 diabetes or gluten sensitivities. But remember, spelt is still a carb and will still raise your blood sugar. However, you will not get that huge spike in your blood sugar as you would with white flour. Instead, it will be more of a gradual raise that will be easier to maintain and will keep your blood sugar levels more stable.

How to cook using spelt

Spelt is a very versatile grain and can be used for your lighter baked goods and yeast breads. However, cooking with spelt can be a bit more difficult compared to other wheat varieties. This is because it has a higher protein content similar to hard wheats, but its gluten structure isn’t as strong.

This means that when you use 100% spelt in yeast bread, it won’t rise as well as other hard wheat does. So, when making a yeast bread, such as pizza dough, rolls, or bagels for instance, it is suggested to mix a hard wheat with your spelt. For the best results, you will want your whole wheat flour mixture to be 25 to 50% spelt. However, you do not have to do this. Spelt alone will still work making a yeast bread just might be harder to work with and won’t have as good of a rise.

Now if you are making something that doesn’t require that gluten development, such as cookies, muffins, or pancakes, you can use 100% spelt without the issue of it not coming together properly. To do this, you can use a 1:1 ratio to replace other kinds of wheat.

Ingredients for fresh-milled flour dinner rolls

  • 2 cups hard white wheat berries
  • 1 cup spelt wheat berries
  • 1 1/4 cups warm water
  • 2 tsp salt
  • 2 Tbsp instant yeast
  • 1 1/2 Tbsp Olive oil
  • 1/4 cup honey
  • 2 eggs

How to make fresh milled flour dinner rolls

First, mill the flour

Then, warm your water to 90 degrees

Add warm water, salt, olive oil, honey, and eggs to your mixer and combine

Next, add the flour & mix until incorporated

Fresh Milled Flour in a mixing bowl mixed with wet ingredients until the flour was incorporated.

Now, cover and let rest for 15-20 minutes to allow the fresh milled flour to start absorbing the liquids

After the rest, add in the instant yeast & mix in

Then, begin the kneading process. If more flour is needed, begin adding SLOWLY just until the dough is pulling away from the sides of the bowl.

Knead until you reach a windowpane. This takes about 10 minutes in my Bosch mixer.

Recipe Tips

To check for windowpane: Pinch dough between your fingertips and stretch it. If you are able to stretch it enough to see light through it, you have reached windowpane.

Dough will be sticky: This dough is sticky. Do NOT add to much flour!

Working with sticky dough: Oil your hands and working area. This will make working with sticky dough easier.

After you have reached the windowpane, oil your hands and working surface.

Remove dough from mixer and divide into 12 parts

Roll & shape each part into a ball, making sure to create tension to get a better rise

Cover & let rise for 45 minutes to an hour

Preheat oven to 375 degrees

Bake at 375 degrees for 15-20 minutes. The internal temperature should be 185- 190F when done.

Butter the tops of the rolls & enjoy!

  2. The recipe card at the end does not list the eggs. I didn’t see them in the main blog until my dough was too dry. I how I can recover the dough.

    1. I am so sorry about this. I did go fix that on the recipe card. However, the good news is your dough is not ruined. Fresh-milled flour is very forgiving, and dry dough can almost always be saved. For this situation go ahead and add the eggs (late). To do this crack the eggs into a small bowl and whisk lightly then add them to the dough a little at a time, kneading gently after each addition. The dough may look messy or slippery at first (that’s normal). Keep mixing and it will come back together. If the dough is still dry after adding the eggs add warm water 1 tablespoon at a time (Most doughs only need 1–3 tablespoons extra) making sure to fully mix before adding more.
